My son has always loved trains.  When he was very young, we used to seek out trains for him to watch speed by.  This Halloween ghost train cake was a pure delight to design with him and brought back a lot of great memories for both of us.

Strawberry Upside Down Cake

For the Love of Strawberries! 

We are all familiar with Pineapple Upside Down Cake, but I want to show you a fabulous variation of that wonderful desert that uses strawberries instead of pineapple.

This is an extremely easy recipe that you could easily throw together in a few minutes, bake it for 50 minutes and have the perfect Valentine's Day cake for your sweetheart.

Strawberry Upside Down Cake Recipe

This Strawberry Upside Down Cake Recipe calls for for only 3 simple ingredients in addition to the fresh strawberries.  When you see the recipe, you will be very surprised to discover that this Strawberry Upside Down Cake is made with a store purchased box cake mix, marshmallows, gelatin and the strawberries.

It does have to bake for 50 minutes and cool for at least 1 hr., but the prep will be fast and easy.

Let me note however, the photo of the Strawberry Upside Down Cake shows a round cake.  The recipe calls for a 9 x 13 baking pan.   In order to get the round cake as shown, I would recommend using a non-stick springform pan like the one shown below.

If you use the springform pan, do not release the side until the cake is completely cool.   This will take at least 2 hrs.  

Also, this cake mixture is very runny.   It is not like a cheesecake.  You will need to put some type of protector like a thin cookie tray under the springform pan to protect the bottom of your oven.

Homemade Ice Cream Sandwiches

Homemade Ice Cream SandwichWith the heat of the summer, many of us are craving ice cream and something we can easily hold instead of scoops in a bowl.  This homemade ice cream sandwich recipe looks like the perfect summer ice cream treat.

I remember my childhood days and playing outside.  Every child in the neighborhood would run for their piggy bank money when we heard the melodious sounds of the ice cream truck.  Fortunately, the ice cream man was wise enough to drive slowly to give us time to collect our coins and get back outside.

My favorite selection was an ice cream sandwich.  Nothing ever tasted better than an ice cream sandwich on a really hot day.  Playing outside was hard work and we needed a cold treat.

I haven't seen an ice cream truck in years, perhaps decades.  I never realized how much I took that ice cream truck for granted.  I sure do miss them!  Even as an adult, I imagine I would run for my piggy bank given the chance.  Since there is no ice cream truck, I need a really delicious alternative.  These homemade ice cream sandwiches might be a little more work, but they are definitely worth it!  Plus, I love the extra chocolate coating that actually reminds me of a Klondike bar, but I also want that cake brownie in my cool treat.

VAMPIRE HALLOWEEN CUPCAKES

Creative and Easy Vampire Cupcakes!

Halloween is such a fun time of the year and there are so many great ideas for Halloween fun food.  

I recently discovered a unique idea and recipe published by ChineseKitesforKids on Squidoo.  I simply had to share it with everyone!  I love these "blood" filled cupcakes which is achieved by swirling red tinted white cake mix into the dark cake mix before baking.  Oh, be sure to check out her alternate way to decorate the cupcake tops :)


This is truly an awesome idea!  It is so simple and sure to evoke the desired response from your family and guests.

TASTY TART RECIPES

A Treasure Trove of Tarts!

Tarts are beautiful and tasty treats for any party, shower, tea or luncheon.  The also make an excellent dessert.  

Melissa Miotke has been generous enough to give us several choices of flavor and tart fillings.  She offers a recipe for Lemon Tart, Chocolate Tart, Fruit Tart and a Butter Tart.  She also provides the basic tart shell crust recipe.


They all look and sound delicious!  I do believe there is a Tempting Tart here for everyone.

DANISH WEDDING COOKIES RECIPE

Mouthwatering Delicious!

The picture of these fabulous Danish Wedding Cookies is indelibly "inked" on my brain!  At night, I have visions of Danish Wedding cookies dancing in my head.

Fortunately, 24websurf was gracious enough to share her recipe for these delicious cookies.  Now, I can have my fantasies and eat them too :)  It is really hard to believe that the combination of a few common ingredients can make such delectable treats.
